Ingredients

  • 2 salmon fillets (wild-caught if possible)

  • 2 tbsp olive oil (or melted coconut oil)

  • 2 tbsp fresh lemon juice

  • 2 garlic cloves, minced

  • 1 tsp Dijon mustard (optional, adds depth of flavor)

  • 1 tsp honey or maple syrup (optional, for slight sweetness)

  • ½ tsp sea salt

  • ¼ tsp black pepper

  • ½ tsp paprika (for a subtle smoky flavor)

  • 1 tsp dried oregano (or fresh chopped herbs like parsley, thyme, or dill)

  • ½ tsp chili flakes (optional, for a bit of heat)

  • Lemon slices (for garnish)

Preparation

  1. Preheat oven to 200°C (400°F). Line a baking sheet with parchment paper.

  2. Prepare the marinade: In a small bowl, whisk together olive oil, lemon juice, minced garlic, Dijon mustard, honey (if using), salt, pepper, paprika, and herbs.

  3. Coat the salmon: Place the salmon fillets on the baking sheet and brush or drizzle the marinade over them.

  4. Bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork. (Cooking time may vary based on thickness.)

  5. Broil (optional): For a slightly crispy top, turn on the broiler for the last 2 minutes.

  6. Serve with fresh lemon slices and an extra drizzle of olive oil.
